How many clamps do I need if I’m gluing up a 6’-long tabletop? And do I need to put them on both sides of the panel?

One rule of thumb is to use one clamp per foot.
If you’re applying clamps to both sides of the panel, round up to the next odd number in order to keep the clamp spacing uniform. For your 6’ table, use seven clamps: four below the panel and three above.
